The Idea: “I came up with the idea while a student at Purdue. The meeting spot for my friends and teammates was the student union. To me, UNION means the place where friends and family come together.”
The Concept: “Our concept is global cuisine. The Chef and I go to the farmers market twice a week to source out the freshest ingredients, and develop the most appealing menu possible.”

Paul Miller is a charismatic, energetic, hands-on restaurateur and entrepreneur with over 20 years experience in the restaurant business.
Miller started working in the restaurant business with the Pappas family straight out of Purdue in Dallas, before moving with the Pappas organization to Atlanta and Chicago. In Houston, Miller worked for Grand Lux Café in the Galleria for a few years and before becoming the general manager for four years at McCormick & Schmick's.
Miller prides himself with providing the absolute best dining experience to every single guest that comes into The Union Kitchen. Our motto is " the perfect UNION of good friends and great food".

Creative, Passionate and Gifted are words often used to describe Executive Chef de Cuisine Juan Arellano. At ”The Union Kitchen" Chef Arellano will be showcasing traditional global favorites with a personal twist that has already proven to meet Houstonian’s highest standards.
“My career started when I was just a kid, watching my mom and dad in work the line during peak hours at Ninfa’s. Sometimes, if I were brave enough, I would go watch the grill guys. I was in awe all the smells, the sounds, and the organized chaos. I fell in love with the kitchen.”
Chef Arellano’s 16 years of culinary experience was acquired by working for renowned restaurants such as: The Cheesecake Factory, P.F. Chang’s, Perry’s Steakhouse and McCormick and Schmick’s.
